Dr. Lederman’s Black Bean Soup

It’s delicious!



In a big pot add all ingredients:

   

    1 cup carrots

    1 cup celery

    1 cup onion

    6 cans of black beans

    1 lb. of frozen corn

    4 cans of crushed tomatoes spiced with green chilies

    2 banana peppers chopped up

    1 jalapeno pepper chopped up


Cook in pot until boils and then simmer for 30 minutes.


While soup is cooking:


Cook in pan (sauté with vegetable broth or water) for about 10 minutes

    1/2 cup onions

    1 head of kale

    1 head of collards

    1 head of chard


Put cooked greens and 1/2-1 cup of fresh cilantro in a food processor (until blended)


Mix blended greens with soup until stirred in completely


Serve in a bowl with crushed up oil-free, corn chips mixed in.
