Split Pea Soup - S.P. from Los Angeles, CA
"I tried this recipe last night for our family dinner. It was a huge success. I recommend it highly for anyone fond of split pea soup."
Ingredients:
* 1 onion – chopped
* 1 1/2 cups split peas
* 2 large carrots – shredded
* 10 cups boiling water
* 2 tbs powder – chicken soup style vegetable powder (vegan)
Preparation:
1. Saute onion until yellow, add split peas and carrots and mix
2. Boil water and add chicken soup style powder
3. Cook on low heat about an hour, mix periodically so it does not stick
4. Taste – if needed add salt and pepper
5. Pour into serving plates, you can decorate with chopped parsley
