Stuffed Peppers - M.H. from Los Angeles, CA

"My famous stuffed peppers..."



Take your favorite color bell pepper and slice off the top, core and remove seeds. Take a small slice off of the bottom to help it to stand up in a baking dish. Fill the pepper with whatever leftover grain, lentil, beans you have in the fridge. I also chop up whatever leftover mushrooms, onions, etc. I want to use up. Depending on if you want a Mexican flavor…use black beans/rice and mix in a little salsa. Italian? Add a little pasta sauce. Use chopped nuts, avocado, tempeh whatever. Just remember to add some form of liquid to the tops and around the bottom of the baking dish. I cover and microwave until soft. You can also bake in a 350-400 degree oven covered with foil so it doesn’t dry out.
